Sous Bois, meaning Under the Woods, is an invitation to step into a world shaped by our hands. Two craftsmen working with nature in different but deeply connected ways. On December 11, chef Charly Biwer and Kathlyn of INFIIORATA welcome you into an experience where food and floral art grow from the same roots: touch, intuition, and the transformation of raw materials into something that nourishes every sense.
When you enter, you are embraced by the quiet depth of the forest. Soft moss, textured branches, earthy scents and the muted tones of early winter create an atmosphere that feels raw, warm and almost breathing. Every detail is placed by hand, crafted to let you feel the presence and purity of nature.
Charly approaches his cuisine like a true craftsman. He takes game, roots and winter herbs in their most natural state and guides them with low intervention and processing to their very flavours. His cooking carries the warmth of the season, the softness of smoke and the earthy richness of the forest floor.
Kathlyn extends this journey with her floral craftsmanship. She shapes the room using natural materials that still hold life within them. Moss becomes a tactile carpet, branches form sculptural lines, winter foliage adds depth and movement. The space around you is not decorated but crafted, inviting you to breathe, touch and sense the world that inspired the meal.
